Eating the seeds is certainly more useful than growing green fuzz onto an Obama head for a few weeks! So first off, this is a great post. However, the major chia sites neglected to mention that if you gel the seeds, you don't HAVE to drink them. The gel they make can be used to substitute half the butter in your common baked recipes, and it doesn't have a flavor of it's own. So you get same-tasting but half-fat baked goods if you use chia.
